What is Asiago cheese?
Asiago is an Italian cheese that looks and tastes quite similar to Parmesan cheese. It is quite hard and brittle but easily grated. It tastes much like Parmesan cheese but is a bit more subtle and savory, almost nutty and not quite as salty as Parmesan. Asiago cheese can be used in place of Parmesan or Romano cheese in most dishes. It can be sliced and eaten with sandwiches or more often graded onto pasta, soup, or salad. If you like Parmesan or Romano cheese I strongly recommend you try asiago. It can be easily found in most grocery stores as well as in its classic form from cheese importers and specialty food sellers.
