What is an Egusi? Uses and Health Benefits of Egusi

Egusi is a West African melon. The melon’s flesh is bitter and inedible. Only the seeds are eaten. Egusi seeds are enriched with proteins and their flavor is somewhat close to that of pumpkin seeds. Seeds are oval in shape and white in color. The shelled seeds are grounded for use in many Nigerian recipes, especially for the popular Egusi soup. Seeds should be purchased fresh to minimize chances of fungal growth which might be carcinogenic. Toasted seeds are eaten for snacks or fried in cakes.
