It can substitute nearly any grain in cooking. It has a delicious taste and is rich in iron, potassium and proteins. It is a good source of dietary fiber and is easily digestible. It also comprises saponin that lowers cholesterol and is protective against diabetes. It is an ancient crop and can grow in poor soil, arid climate and high altitudes. It thrives best in well drained soils
