Vanillin has been witnessing a significant rise in prices in recent years, mainly due to drastic increase in oil prices and spurts in raw material costs. Vanillin as well as ethyl vanillin is used by the food industry, though the latter is more expensive. Biosynthetic vanillin, which is used widely, costs $700 per kg and is sold under the trademark name `Rhovanil Natural’. Petrochemical vanillin is sold at $15 per kg. Vanillin is used in flavorings, fragrances, pharmaceuticals and perfumes. The largest use of vanillin is as a flavoring, usually in sweet foods.
