Is Ricotta a Soft Cheese?

Ricotta cheese is considered to be a fresh cheese. It is a soft cheese that is mild and creamy. What makes cheese softer is the amount of moisture that is retained in the curd during the process of making the cheese. Like most soft cheeses, ricotta is very versatile. While it is traditionally used in Italian dishes like lasagna, some people make a desert of it by sprinkling it with sweet toppings such as chocolate.
