Is Mozzarella Cheese Aged?

Surprisingly, mozzarella cheese is not aged. The best time to eat this cheese is actually within hours of its making. Fresh mozzarella is made by taking the curds and heating them in water or whey until they from strings and they become elastic in texture. The curds are then stretched and kneaded until smooth. Then they are formed into round balls. Aged cheese is left to mature before packaging, sale and consumption.
