Is American Cheese Aged?

What is commonly known as American cheese is not aged. American cheese is commonly a blend of milk, milk fats and whey protein concentrates. American cheese is not considered a fresh cheese either, as it will last much longer in the refrigerator than most fresh cheeses. The term aged cheese refers to cheeses that have been cured for more than six months and have a somewhat sharper of fuller flavor, which is not the case with American cheese.
